Kulfi is a delicious sweet ice cream from Indian cuisine. And by sweet, we mean sweet. Fortunately, pistachio, cardamom and saffron balance that flavor nicely, creating a delicious dessert that tastes extra good after a nice, long evening of dining. Extra fun: you can make this ice cream in no time and then all you have to do is put it in the freezer for at least 12 hours.

Ingredients
- to taste Jasmine Rice Gold (Fragrant Rice)
- to taste Rice Oil
300 ml whipping cream
90 g pistachios (60 g for in the ice cream & 30 g as topping)
optional: a few saffron threads ice cream moulds or ice cream cups
wooden ice cream sticks
Preparation method for Kulfi - Indian ice cream
- Chop the pistachios and small pieces.
- Peel the cardamom pods and crush the seeds in a mortar or with a spoon.
- Put the whipping cream in a bowl with the cardamom and a few threads of saffron. Whip this slightly thicker with a whisk or mixer.
- Add the mango puree, condensed milk and pistachios and stir again.
- Pour the mixture into your ice cream molds.
- Place in the freezer."A few hours later" Top with pistachios and enjoy a delicious ice cream or serve it as dessert. Kulfi takes a little longer to freeze, but melts a little faster than normal ice cream.
Serve tip
No ice cream cups on hand? Pour into a cake tin or baking dish and scoop out nice ice cream balls when the kulfi is completely frozen.
